PEANUT BUTTER FREE NO BAKE COOKIES

I have been making no bake cookies since I was a kid. They were one of the first recipes that I learned to make and I have made them many times over the years.
No bake cookies make a perfect summertime cookie. Kids love them and they do not require that you heat the oven. These are both things I look for in a summertime dessert.
However, the recipe that I have been making for years comes from my mom, and it contained peanut butter.

No bake cookies were one of those recipes that I knew I was going to miss, but then I started wondering why I couldn’t  make them without peanut butter. I figured the worst they could be was a little dry, so I gave it a try.

I simply followed my mom’s recipe, but left out the peanut butter.  Well, okay I added a few chocolate chips, but they are the same basic recipe.
These are so good. I was a little surprised at how well they turned out. We loved them.
I think even those that can eat peanut butter would enjoy these. It saves a little fat and calories if you leave the peanut butter out. It also makes them more frugal. And if you are gluten free, you can easily using gluten free oats in these and have an easy gluten free cookie as well.

I. Ingredients:   

1 1/2 cup(s) sugar.
1/4 cup(s) Hershey's Cocoa    
3 cup(s) quick cooking rolled oats   
1 Tbsp creamy peanut butter   
1 Tbsp vanilla extract   
1/4 cup(s) regular butter  
1/2 cup(s) fat free milk  

II. Directions: 

Line a baking sheet with waxed paper.
Mix oats and coconut in a large bowl until thoroughly combined.
Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container..
We took a Sunday drive (a habit, it would seem as of late) to the Angeles National Forest and needed a quick treat  and these were perfect. Except it did make me a little woosey (ALOT woosey). All those switchbacks, the sugar, the headache, the children...oy. I can barely talk about it, let alone type it.
